The hot break method is a traditional technique used in tomato processing to remove excess water from the tomatoes. During the hot break process, the tomatoes are heated to a high temperature, usually around 85-95°C (185-203°F), for a short period of time. This helps to break down the pectin in the tomatoes, resulting in a thicker consistency and enhanced flavor in the final tomato paste.
